The Watershed Hotel and Cohibar
Hot summer days needs light healthy nourishing meals. And a cold drink to help cool down and enjoy the day. Whether at home, at the beach or park, you can make a meal to meet the Summer occasion. The Watershed Hotel brings to you one of its most popular summer dishes created by our head chef, Charles Schmidt. Here’s the recipe, simple but so tasty and healthy:
Chicken 400grms
Smoked paprika 20grams
Cherry tomatoes x1 punnet
Avocado x1
Cos lettuce x 1 large
100 grams bacon
Croutons x 50grams
Parmesan shaved x 50 grams
Mayonnaise x 30 ml
Paul Newman’s Caesar dressing
Limes x 2
Coriander x 1 bunch
Charles says: This is a recipe I really like as you can do everything from scratch or take some short cuts and do it in really quick time. You may choose to make your own mayonnaise, croutons and salad dressing or just grab it off the shelf at the supermarket. Either way, this twist on a classic really suits our summer.
Method:
1. Cut the chicken into strips, marinate the chicken with the smoked paprika and lubricate with vegetable oil - squeeze one lime. Marinate for about an hour in the fridge.
2. Cut the bacon into strips and cook in a pan until desired crispness is acquired (I like my bacon reasonably dark but ultimately it’s up to you). Put to the side and pat down with a paper towel.
3. In a large bowl cut the cos lettuce horizontally, add cherry tomatoes (halved) add the bacon, croutons and Parmesan.
4. Cook the chicken in a pan, you will find you should get a charred effect from the smoked paprika - you can cook on the barbeque too which would provide a great result. When cooked put to the side ready for plating
5. Add the salad dressing and the mayonnaise to the cos lettuce and salad ingredients. Mix together but be careful not to bruise the salad so a few easy tosses should do it.
6. Put into a salad bowl - adding the Avocado now - if you do it earlier the avocado will just get smashed when you toss the salad.
7. Add the chicken on top garnishing with coriander and lime wedges.
Enjoy with a cold beer or glass of bubbles. Alternatively, just come down to the Watershed and we will cook it for you!
